- 4 boneless, skinless chicken breasts (or thighs)
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon paprika
Salt and pepper, to taste
1 tablespoon fresh lime juice
Instructions
- Step 1: Sauté the Aromatics: In the same skillet, add the coconut oil over medium heat. Add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and grated ginger (if using) and sauté for an additional 1 minute until fragrant.
- Step 2: Cook the Rice: Add the rice to the skillet and stir to coat with the oil and aromatics. Pour in the coconut milk and water (or broth). Stir and bring to a simmer.
- Step 3: Simmer and Steam: Once simmering, reduce the heat to low and cover the skillet with a tight-fitting lid. Let the rice cook for about 15-18 minutes, or until the liquid is absorbed and the rice is tender. Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.
