- ½ teaspoon black pepper
- Optional garnish: grated Parmesan cheese, fresh herbs
Instructions
- Step 1: Sauté the vegetables
Heat olive oil in a large Dutch oven or soup pot over medium heat. Add diced onions, carrots, and celery. Cook for 4-5 minutes until vegetables begin to soften. Add minced garlic and cook for another 30 seconds until fragrant. - Step 2: Cook the chicken
Add chicken pieces to the pot with the vegetables. Cook for 5-6 minutes, stirring occasionally, until chicken is no longer pink on the outside. - Step 3: Add liquids
Pour in the chicken broth and bring to a simmer. Let cook for 10 minutes until chicken is fully cooked through and vegetables are tender. - Step 4: Add cream and cheese
Reduce heat to medium-low. Stir in the heavy cream. Add cubed cream cheese in batches, stirring until completely melted and incorporated into the soup. This creates the signature creamy base for your chicken pasta soup. - Step 5: Cook pasta
For thicker soup: Add the uncooked pasta directly to the pot and simmer until pasta is tender, about 8-10 minutes, stirring occasionally to prevent sticking.
For brothy soup: Cook pasta separately according to package directions, then add to individual servings. - Step 6: Add final ingredients
Once pasta is cooked, stir in the shredded cheddar cheese until melted. Add chopped spinach and stir until just wilted, about 1-2 minutes. Season with salt and pepper to taste. - Step 7: Serve
