Ingredients

  • 2 large boneless/skinless chicken breast
  • 2 teaspoons Italian seasoning
  • Salt/Pepper
  • 2 tablespoons butter (melted)
  • 12 tablespoons olive oil
  • 10.5 oz. cream of chicken soup
  • 1 ½ cups milk
  • 1 cup sour cream (at room temp)
  • ½ teaspoon onion powder
  • 1 oz. packet Ranch seasoning mix

Instructions

  1. Step 1- Season & Sear the Chicken: Slice the chicken into 2–3 thinner pieces. Pound with a meat tenderizer if needed, aiming for ½ inch thick slices. Pat the chicken dry and season both sides with Italian seasoning and salt/pepper. Brush one side of each piece with melted butter (not too hot).
  2. Step 2– Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear the chicken in batches for 4–5 minutes per side, until a golden brown crust forms. Remove and set aside.
  3. Step 3- Make the Sauce: In the same skillet, add the sauce ingredients. Stir to combine, let it bubble gently, and reduce for 5 minutes.
  4. Step 4- Finish the Chicken: Return the chicken to the skillet and spoon the sauce over the pieces. Partially cover and let the chicken heat through, allowing it to absorb the sauce flavors, about 10 minutes.
  5. Step 5- Optional Serving Suggestion: Serve with baked potatoes and spoon extra sauce over each potato.
