Description

  • 2 tablespoons vegetable oil
  • 2 medium onions, thinly sliced
  • 4 cloves garlic, minced
  • 3 cups beef broth, low sodium preferred
  • 1/4 cup soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1 teaspoon black pepper
  • 6 hoagie rolls or French bread rolls
  • 12 slices provolone cheese (optional)
  • 2 tablespoons butter, softened

Instructions

  1. Step 1: Prepare and Sear the Beef Start by trimming excess fat from your chuck roast and pat it dry with paper towels. Season generously with salt and pepper on all sides. Heat vegetable oil in a large skillet over medium-high heat until shimmering. Carefully place the roast in the hot pan and sear for 3-4 minutes on each side until you’ve developed a rich brown crust all over. This step creates the foundation for an incredibly flavorful Crockpot French Dip.
  2. Step 2: Prepare the Slow Cooker While your beef is searing, place sliced onions at the bottom of your slow cooker. Once the beef is seared, transfer it to the slow cooker, placing it on top of the onion layer.
  3. Step 3: Create the Cooking Liquid In a medium bowl, combine beef broth, soy sauce, Worcestershire sauce, minced garlic, dried thyme, rosemary, black pepper, and bay leaves. Whisk everything together, then pour this aromatic mixture over your beef in the slow cooker.
  4. Step 4: Slow Cook to Perfection Cover your slow cooker and set it to low for 8-10 hours or high for 5-6 hours. The beef is ready when it easily shreds with a fork, filling your home with an irresistible aroma.
  5. Step 5: Prepare the Au Jus and Assemble Once cooking is complete, carefully remove the beef to a cutting board and let it rest for 15 minutes. Strain the cooking liquid through a sieve, skim off excess fat, and return it to the slow cooker as your au jus. Shred the beef, mix with cooked onions, and return to the slow cooker.
  6. Step 6: Toast and Assemble the Sandwiches Split your rolls, butter the insides, and broil them until golden. Optionally add cheese and broil for another 30-45 seconds. Pile the shredded beef and onions onto the rolls, and serve each sandwich with a bowl of warm au jus for dipping.
