- 1 tbsp honey or maple syrup
- 2 cloves garlic, minced (about 2 tsp)
- 1–2 tbsp chili oil or chili crisp (adjust to your heat preference)
- 1 tbsp sesame oil
- 2–4 tbsp warm water (to adjust consistency)
- 2 tbsp chopped roasted peanuts
- 2 tbsp sliced green onions
- 1 tbsp toasted sesame seeds
- Fresh cilantro leaves (optional)
Instructions
- Step 1: Prepare the Cucumbers Start by washing your English cucumbers thoroughly under cool water. Slice the cucumbers into ¼-inch thick rounds or diagonally. Place the cucumber slices in a colander, sprinkle with 1 teaspoon of salt, and let them sit for 20-30 minutes to draw out excess moisture. Pat dry before using.
- Step 2: Create the Spicy Peanut Sauce In a medium bowl, combine peanut butter, soy sauce, rice vinegar, honey, minced garlic, chili oil, and sesame oil. Whisk until smooth. Adjust the consistency with warm water until pourable. Taste and adjust seasoning as needed.
- Step 3: Combine and Serve Transfer dried cucumber slices to a bowl, drizzle with rice vinegar, and toss gently. Pour most of the peanut sauce over the cucumbers, folding together until well-coated. Arrange on a plate, drizzle with remaining sauce, and sprinkle with peanuts, green onions, sesame seeds, and cilantro. Serve immediately or chill briefly.
