- 3 tablespoons vegetable oil
- 4 cloves garlic, minced (about 2 tablespoons)
- 1 tablespoon fresh ginger, grated
- 3 green onions, thinly sliced (white and green parts separated)
- 3 tablespoons soy sauce (low-sodium preferred)
- 1 tablespoon rice vinegar
- 2 tablespoons brown sugar
- 1 tablespoon sesame oil
- 1 tablespoon sriracha or chili garlic sauce (adjust to taste)
- 2 tablespoons butter (creates a silky, rich sauce)
- 1 tablespoon toasted sesame seeds
- Optional protein: 1 cup cooked chicken, beef, tofu, or 2 soft-boiled eggs
- Optional vegetables: 1 cup baby spinach, sliced mushrooms, or julienned carrots
Instructions
- Step 1: Prep and Cook Noodles Bring a medium pot of water to a boil. Add the ramen noodles and cook for 1-2 minutes less than package directions indicate (they’ll finish cooking in the sauce). Stir occasionally to prevent sticking. While the noodles cook, prepare your sauce ingredients. When noodles are just shy of al dente, drain them well but don’t rinse. Set aside and toss with a few drops of oil if they seem sticky.
- Step 2: Create Aromatic Base Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add minced garlic, grated ginger, and the white parts of your green onions. Sauté for 30-45 seconds until fragrant. Keep stirring and do not let it brown.
- Step 3: Build the Sauce Reduce heat to medium and add soy sauce, allowing it to sizzle for 5 seconds. Stir in rice vinegar, brown sugar, sriracha, and sesame oil. Let this mixture simmer for about 1 minute, stirring occasionally, until the sugar has dissolved completely and the sauce has slightly thickened.
- Step 4: Combine and Finish Add your drained noodles to the sauce and toss continuously using tongs to coat every strand. If adding quick-cooking vegetables like spinach or pre-cooked protein, fold them in now. Continue tossing for about 1-2 minutes until everything is well-coated. Remove from heat and immediately add butter, tossing until completely melted and incorporated.
- Step 5: Serve Transfer your noodles to serving bowls and garnish with toasted sesame seeds and the reserved green parts of your green onions. If using, create a nest for a soft-boiled egg in the center. Serve hot for the best experience!
