- Step 1: Prepare the Pineapple If using fresh pineapple, cut off the top and bottom, then remove the skin by slicing downward along the curve of the fruit. Cut crosswise into ½-inch rings, then use a small round cookie cutter or knife to remove the tough core from each ring. Pat the rings thoroughly dry with paper towels—this ensures proper caramelization. If using canned pineapple rings, drain thoroughly and pat dry.
- Step 2: Create the Spiced Sugar In a shallow dish, combine the granulated sugar, cinnamon, and nutmeg (if using). Mix thoroughly to ensure the spices are evenly distributed throughout the sugar. This aromatic mixture will create a beautiful crust on your Fried Pineapple Rings as they cook.
