  • Kalamata olives, pitted and halved
  • Dried oregano
  • Dried thyme
  • Lemon, zested and juiced
  • Red pepper flakes (optional)
  • Crumbled feta cheese
  • Fresh parsley, chopped
  • Salt and freshly ground black pepper

Instructions

  1. Step 1: Prepare the Chicken Start by patting the chicken pieces dry with paper towels—this crucial step ensures proper browning. Season generously with salt, pepper, and half of the dried oregano. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering. Working in batches to avoid overcrowding, add the chicken pieces in a single layer and cook undisturbed for 3-4 minutes until golden brown on the bottom. Flip and cook for another 2-3 minutes until just cooked through (165°F internal temperature). Transfer to a clean plate and cover loosely with foil.
  2. Step 2: Cook the Aromatics In the same pan, add the remaining tablespoon of olive oil. Reduce heat to medium and add the sliced red onion, cooking for 2-3 minutes until it begins to soften. Add the minced garlic and cook for just 30 seconds until fragrant, being careful not to burn it. This aromatic base will infuse the entire Mediterranean Chicken Stir Fry with depth.
  3. Step 3: Add the Vegetables Increase heat to medium-high and add the bell peppers and zucchini to the pan.
