- 3 chicken breasts (, cut into small strips)
- 1–3 tbsp Cajun seasoning (Note: if your seasoning is spicy add ½ tbsp )
- 1 tsp salt
- 1 tbsp olive oil
- ½ tbsp butter
- 1 large onion (, finely diced)
- 2 cloves garlic (, minced)
- 2 tbsp chopped sun-dried tomatoes
- 1 tbsp tomato paste ((tomato purée))
- 1 cup (200g) orzo pasta
- 1 cup (240ml) chicken broth ( or stock made with a stock cube)
- 1 cup (30g) shredded spinach
- ¼ cup (60ml) heavy cream ( (double cream))
- 3 tbsp grated parmesan cheese (, plus extra to serve)
Instructions
- Step 1: In a large pot, heat olive oil over medium heat. Add diced chicken and season with Cajun seasoning, salt, and pepper. Cook until chicken is browned and cooked through, about 5-7 minutes.
- Step 2: Remove chicken from the pot and set aside. In the same pot, add diced onions and garlic, cooking until softened and fragrant, about 2-3 minutes.
- Step 3: Add bell pepper if using, and cook for an additional 2 minutes.
- Step 4: Stir in the orzo pasta, chicken broth, and heavy cream. Bring to a boil.
- Step 5: Reduce heat to low and let simmer for 10-12 minutes, or until the orzo is tender, stirring occasionally.
- Step 6: Stir in the cooked chicken and Parmesan cheese until well combined and creamy. Adjust seasoning as necessary.
- Step 7: Serve warm, garnished with fresh parsley if desired.
