- 1 can (14.5 oz/411g) diced tomatoes, undrained
- 2 tablespoons (33g) tomato paste
- 3½ cups (830ml) vegetable broth
- 1 teaspoon dried basil
- ½ teaspoon dried oregano
- ¼ teaspoon red pepper flakes (optional)
- 4 cups (120g) fresh spinach, packed
- ½ cup (50g) grated Parmesan cheese, plus more for serving
- Salt and freshly ground black pepper to taste

- Step 1: Prepare Your Base Heat olive oil in a large, deep skillet or Dutch oven over medium heat. Add the diced onions and cook for 3-4 minutes until they become translucent. Stir in the minced garlic and cook for another 30 seconds until fragrant, being careful not to let it brown or burn.
- Step 2: Build Your Sauce Add the tomato paste to the onion-garlic mixture and cook for 1 minute, stirring constantly to slightly caramelize it.
