- 4 oz (113g) cream cheese, at room temperature
- 2 tablespoons (30ml) extra virgin olive oil, plus more for drizzling
- 1 tablespoon (15ml) honey
- 1 tablespoon (15ml) fresh lemon juice
- 1 clove garlic, minced (about 1 teaspoon)
- ¼ teaspoon freshly ground black pepper
- ½ cup (80g) pomegranate arils (seeds)
- ⅓ cup (40g) roasted pistachios, roughly chopped
- 2 tablespoons fresh mint leaves, chopped
Instructions
- Step 1: Place the feta cheese and cream cheese in a food processor. Process for 2 minutes until the cheeses begin to break down and combine. Scrape down the sides of the bowl with a rubber spatula to ensure even processing.
- Step 2: With the food processor running, slowly drizzle in the olive oil through the feed tube. Continue processing for another 2 minutes until the mixture becomes light and fluffy.
