  • 1/4 cup (60ml) extra virgin olive oil, divided
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 medium red onion (about 6oz/170g), thinly sliced
  • 3 tablespoons capers, drained
  • 1/3 cup (50g) golden raisins, soaked in warm water for 10 minutes
  • 1/4 cup (35g) green olives, pitted and halved
  • 3 tablespoons pine nuts, lightly toasted
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon
  • 2 cloves garlic, minced
  • 1/4 cup (15g) fresh flat-leaf parsley, chopped
  • 2 tablespoons fresh mint leaves, torn
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon white wine vinegar

Instructions

  1. Step 1: Prepare the Cauliflower Preheat your oven to 425°F (220°C). Cut the cauliflower into bite-sized florets of roughly equal size to ensure even cooking. In a large mixing bowl, toss the florets with 2 tablespoons of olive oil, making sure each piece is lightly coated. Season with salt and pepper, then spread in a single layer on a large baking sheet.
  2. Step 2: Roast to Perfection Place the cauliflower in the preheated oven and roast for 20-25 minutes, turning the florets halfway through cooking. You’re looking for golden brown edges and tender centers that still have a slight bite. While the cauliflower roasts, place your pine nuts on a separate small baking sheet and toast them in the same oven for just 3-5 minutes until golden—watch carefully as they burn quickly!
  3. Step 3: Prepare the Dressing In a large serving bowl, combine the remaining 2 tablespoons of olive oil, minced garlic, lemon zest, lemon juice, white wine vinegar, and red pepper flakes (if using).
