Description

Valentines Day Cheesecake: Creamy, Decadent, and Irresistible. Made with rich cream cheese, vanilla, and a buttery graham cracker crust. indulgent treat!

Ingredients

Scale
  • 2 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 3 tablespoons granulated sugar
  • Pinch of salt
  • 4 packages cream cheese, at room temperature
  • 1¼ cups granulated sugar
  • 4 large eggs, at room temperature
  • ⅓ cup heavy cream
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons all-purpose flour
  • ⅓ cup raspberry or strawberry preserves, strained
  • 1 tablespoon water
  • 23 drops red food coloring (optional for enhanced color)

Instructions

  1. Step 1: Prepare the Crust Preheat your oven to 325°F (165°C). In a medium bowl, combine graham cracker crumbs, melted butter, sugar, and salt until the mixture resembles wet sand. Press firmly into the bottom and about 1 inch up the sides of a 9-inch springform pan. Use the bottom of a measuring cup to compact the crust evenly. Bake for 10 minutes until lightly golden, then remove and cool completely. Reduce oven temperature to 300°F (150°C).
  2. Step 2: Make the Filling In a large bowl using a stand mixer fitted with the paddle attachment (not the whisk!), beat the softened cream cheese on medium-low speed until completely smooth, about 2 minutes. Add the sugar and beat until incorporated, scraping down the sides frequently. Add eggs one at a time, mixing just until each disappears into the batter. Pour in the heavy cream and vanilla, mixing gently until incorporated. Finally, add the flour and mix for 10 seconds until just combined. Your batter should be silky smooth without any lumps.
  3. Step 3: Prepare the Valentine’s Swirl In a small microwave-safe bowl, warm the strained raspberry or strawberry preserves with water for 20-30 seconds until fluid. If using, add red food coloring for a more vibrant Valentine’s hue. Stir until smooth and set aside.
  4. Step 4: Assemble and Create the Swirl Pattern Pour the cheesecake batter over the cooled crust. Drop spoonfuls of the red mixture randomly over the surface. Using a skewer or thin knife, gently swirl the red mixture through the batter in figure-eight motions to create a marbled effect. Don’t over-swirl, as this will muddy the distinct patterns that make your Valentine’s Day Cheesecake so visually striking.
  5. Step 5: Bake with Care Place the prepared springform pan in a large roasting pan. Pour hot water into the roasting pan until it reaches halfway up the sides of the springform. Bake at 300°F for 65-75 minutes. The cheesecake is done when the outer edges are set but the center still has a slight jiggle (about a 3-inch wobbly center is perfect). Turn off the oven, prop the door open slightly, and let the cheesecake cool inside for 1 hour before removing.
  6. Step 6: Chill and Serve After cooling at room temperature for another hour, cover loosely with plastic wrap and refrigerate at least 6 hours, preferably overnight. Before serving your Valentine’s Day Cheesecake, run a thin knife around the edge of the pan and gently remove the springform collar. Garnish as desired with fresh berries, chocolate shavings, or whipped cream for a romantic presentation that will make your Valentine swoon.
